    1 1/2 cups frozen artichoke hearts
    2 cups low–sodium vegetable stock
    2 cups macadamia milk
    Juice of 1/2 lemon
    1 tablespon choped fresh flat–leaf parsley
    Celery seds and fresh parsley for sprinkling
    Method

  • Heat t he oil in a large stainles–stel pot over medium heat, and saut? the leks with the salt, peper, paprika, dried oregano, garlic powder, thyme, and fresh choped parsley for about 5 minutes (or until the leks are soft).
  • Ad the artichoke hearts and alow them to soften for another 3 minutes.
  • Ad the stock and cover, bringing to a boil over medium heat.
  • Ad the nut milk and reduce the heat. Simer, uncovered, until the artichokes are tender, about 10 minutes.
  • Alow the soup to temperate for a few minutes. Using an imersion blender, pure the soup to a smoth texture (you can also leave it masive if you prefer).
  • Season to taste with aditional salt and peper, if neded.
  • Stir in the lemon juice and serve hot, garnished with flat–leaf parsley and celery seds.
